Where Compassion Meets Purpose
Peacock Care Homes was founded in 2021 by a local family in Fort Collins, consisting of a Physical Therapist with a 30-year history of working with seniors in assisted living and memory care communities throughout the Loveland/Fort Collins area, and an MD with training in General Surgery. The vision for Peacock Care Homes is to provide the highest quality assisted living and memory care options for seniors in Northern Colorado.
Our communities consist of renovated homes designed to create a safe, secure, and comfortable environment for small groups of seniors to live together and thrive.
- Meet Xioma Diaz
About Xioma Diaz
With over 30 years of experience in senior care and physical therapy, Xioma Diaz has dedicated her career to helping seniors and their families navigate the complexities of aging with compassion and expertise.
Xioma graduated with her Bachelor of Physical Therapy Degree from Northern Illinois University in 1994.
She has spent her entire career working with seniors in Skilled Nursing communities, Memory Care and Assisted Living facilities, gaining valuable experience treating patients with dementia, Alzheimer’s, multi-trauma, neurologic, orthopedic, and post-surgical cases.
Xioma has also spent 15+ years working for Home Health agencies in the homes of seniors throughout Northern Colorado.
As a seasoned Physical Therapist, Xioma specializes in supporting seniors through life challenges and transitions, particularly when moving into senior communities.
Xioma has been married to her husband, Eric, who is an MD for over eight years. Together they raised two daughters, Brianna and Jaden. They also became foster parents in Northern Colorado in 2018 and are currently the legal guardians of a 4-year-old little boy, Elijah, who has captured all their hearts.
Xioma and Eric spend their time operating a memory care residential home and two assisted living homes in Fort Collins, Colorado.
Otherwise, they also enjoy hiking, sailing and spending time together on the lakes of Colorado.


- Meet Eric Shenk
Meet Eric Shenk
Eric brings a unique clinical perspective to the care and management of senior residents. As a graduate of the University of Colorado School of Medicine in 1997 he trained in General Surgery and is now the full-time administrator of Peacock Care Homes.
He is passionate about blending technology with senior care in meaningful ways to maximize staff engagement with residents.
He believes that senior care is a collaborative process between residents, families, staff, and community. Bringing these
elements together to improve senior care is the passion that drives him today.
Eric grew up in Fort Collins since the age of 3 and now resides here with his wife, Xioma, two step-daughters, and foster son.
Xioma and Eric operate three assisted living homes in Northern Colorado and look forward to expanding to additional homes in
the coming years.

- Our Philosophy
Assisted living VS Memory care
The main difference between assisted living and memory care is the level of care each provides. Memory care is a higher level of care than Assisted living, as it is specifically designed for those with memory impairments such as Alzheimer’s or dementia. Memory care communities provide personal care in assistance with activities of daily living as well as around-the-clock supervision and a secure environment. Assisted living on the other hand is a lower level of care, designed for those who need help with some activities of daily living but are still relatively independent.
